Cherry Ripe Energy Balls

These cherry energy balls are a delicious and nutritious snack that provide a boost of energy and satisfy your sweet tooth.

Ingredients

  • 100 g oats
  • 120 g almond meal
  • 85 g desiccated coconut
  • 10 dates (pre-soaked)
  • 2 Tablespoons tahini
  • 1 teaspoon vanilla essence
  • 1 Tablespoon maple syrup
  • 1 Tablespoon coconut oil
  • 70 g frozen cherries
  • Chocolate and dried raspberries for topping

    Directions

    1. Place almonds in your Vitamix Dry Grains container and blend at speed 3-4 for 1 minute to get almond meal.
    2. Place oats in your Vitamix Dry Grains container and blend at speed 7-8; for 1 minute to get oat flour.
    3. Add coconut oil, maple syrup, tahini, vanilla essence, oat flour, almond meal, desiccated coconut, frozen cherries, dates to your Vitamix Standard container and blend until all ingredients mix together, Speed 4 for 40 seconds. Use tamper to help achieve a smooth texture. 
    4. If mixture is too sticky, add extra almond meal/oat flour.
    5. Roll out the balls from mixture and place in the fridge before coating with chocolate.
    6. Drizzle melted chocolate and sprinkle dried raspberries on top of energy balls, then place them back in the fridge for an hour.
    7. Store in the fridge.
