Homemade Curry Paste

Why not keep it simple for yourself, this flavourful curry paste is perfect for many recipes and uses basic ingredients that you will find in most shops. Created by @bettinas_kitchen

Ingredients

  • 125 g fresh ginger, roughly chopped
  • 2 garlic cloves
  • ½ shallot, roughly chopped
  • 90 ml olive oil
  • Salt and pepper

Directions

  1. Put all ingredients into the Vitamix blender jug and blend on high for approximately 1 minute.
  2. Pour into a jar, cover the top with a layer of olive oil and keep in the fridge for 3-4 weeks.
  3. Use a couple of tablespoons of this curry paste for many recipes, such as vegetable curries, soups, stews, etc.
