Homemade Curry Paste

Ingredients
- 125 g fresh ginger, roughly chopped
- 2 garlic cloves
- ½ shallot, roughly chopped
- 90 ml olive oil
- Salt and pepper
Directions
- Put all ingredients into the Vitamix blender jug and blend on high for approximately 1 minute.
- Pour into a jar, cover the top with a layer of olive oil and keep in the fridge for 3-4 weeks.
- Use a couple of tablespoons of this curry paste for many recipes, such as vegetable curries, soups, stews, etc.
