Peach, Matcha Green Tea and Blueberry Popsicle

A refreshing balance of fresh peaches and blueberries, with the added health benefits of matcha green tea powder.

Ingredients

  • 250 g (2 cups) peaches
  • 290 g (2 cups) blueberries
  • 60 ml (¼ cup) water
  • 50 g (¼ cup) granulated sugar, or Date Syrup to taste
  • 240 ml (1 cup) plain non-fat Greek yogurt
  • 2 Tablespoons honey, or other sweetener, to taste
  • ¼ teaspoon matcha green tea powder

Directions

  1. Cook peaches over medium heat for about 5 minutes, or until softened.
  2. Place peaches into the Vitamix container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 10, then to High.
  5. Blend for 30 seconds. Transfer to a bowl and allow to cool.
  6. Combine blueberries, water, and sugar in a small saucepan and cook over medium heat for about 5 minutes.
  7. Place blueberry mixture into the Vitamix container and secure lid.
  8. Select Variable 1.
  9. Turn machine on and slowly increase speed to Variable 10, then to High.
  10. Blend for 30 seconds. Transfer to a separate bowl and allow to cool.
  11. Add yogurt, honey and matcha powder into the Vitamix container and secure lid.
  12. Select Variable 1.
  13. Turn machine on and slowly increase speed to Variable 10, then to High.
  14. Blend for 30 seconds.
  15. To assemble Popsicles: Divide peach puree evenly into Popsicle mould. Layer the matcha mixture on top of the peach. Layer the blueberry mixture on top of the matcha. Place Popsicle sticks in the centre of each mould and freeze.

    Notes

    If you do not have popsicle moulds, you can use small, disposable cups.
