Pink Pitaya Bubble Tea

Ingredients
- 1 Pink Pitaya fruit
- 3 Strawberries
- 1 ½ cups tapioca starch
- 2 cups chilled green tea
- 5 Tablespoon maple syrup
- Ice to serve
Directions to make pink pitaya tapioca balls
- Place in your Vitamix blending bowl: ¾ pink pitaya fruit and 2 tablespoons maple syrup
- Blend it all together.
- Add 2 tablespoons of Tapioca starch to the blended pink pitaya and mix it all together.
- Warm up the mixture on a low heat, continuously stirring until jelly texture forms.
- Let the jelly cool down for 5 minutes then gradually add 1 cup Tapioca powder.
(Add more tapioca starch if required mixture should not stick to your hands) - Roll balls with the mixture
- Boil the balls for 15 minutes and let them sit in hot water for another 15 minutes.
- Rinse cooked balls in cold water.
- Add 1 tablespoon of maple syrup to the rinsed cooked balls.
Directions to make the strawberry green tea drink
- Add 2 cups of chilled green tea to your Vitamix blending cup
- Add 3 fresh strawberries, 2 tablespoons maple syrup and small slice of pink pitaya fruit and blend it all together.
- To serve the drink add tapioca balls, ice and strawberry green tea.
