Pumpkin Turmeric Oat Pancakes

A delicious, flour-free pancake made with whole oats that are blended with bananas and pumpkin to add a hint of sweetness. Some fresh turmeric lending a golden yellow colour, and can be further adapted to make this recipe your own.

Ingredients

  • 360 ml Almond Milk
  • 120 g Pumpkin Purée or steamed pumpkin
  • 1 medium (100 g) banana, peeled
  • 2 large eggs
  • 2 Tablespoon maple syrup, optional
  • 215 g rolled oats (or gluten-free oats)
  • 1 Tablespoon baking powder
  • 1 Tablespoon fresh turmeric (or 1 teaspoon. ground)
  • ½ teaspoon Holiday Mixed Spice Blend (or ground cinnamon)
  • ½ teaspoon kosher salt

      Directions

      1. Place lemon juice, eggs, caster sugar, potato starch and zest into the Vitamix container in the order listed and secure lid.
      2. Turn machine on and slowly increase speed to Variable 10, then to High.
      3. Blend for 5 minutes.
      4. Reduce speed to Variable 5 and remove the lid plug. Add butter, 1 piece at a time, through the lid plug opening incorporating butter completely between additions.
      5. Replace the lid plug and increase speed to Variable 10.
      6. Blend for 30 seconds.
      7. Chill before serving or allow to cool slightly and serve at room temperature. *This batter will continue to thicken as it sits - use immediately after blending, or thin slightly with more almond milk as needed.
