Apricot Cranberry Bread

Ingredients

  • 135g whole wheat flour
  • 125g plain flour
  • ½ tsp baking soda
  • 1½ tsp baking powder
  • ½ tsp sea salt (optional)
  • 180ml water
  • 80ml honey
  • 1 large egg
  • 60ml applesauce
  • 75g dried apricots, chopped
  • 100g cranberries, chopped

Directions

  1. Preheat oven to 180°C. Spray a 21 × 11cm loaf pan with cooking spray.
  2. Combine flours, baking soda, baking powder and sea salt in a mixing bowl. Set aside.
  3. Add water, honey, egg and applesauce to the Vitamix container in the order listed. Secure the lid and blend on the highest speed for 15 seconds.
  4. Add the dry mixture to the container. Blend on the highest speed for 20 seconds, using the tamper as needed.
  5. Fold in the apricots and cranberries.
  6. Pour the batter into the prepared pan. Bake for 45–60 minutes or until a knife inserted into the centre comes out clean.

Recipe Notes

  • Swap in other dried fruits or nuts to customise flavour and texture.
