Ingredients
- 135g whole wheat flour
- 125g plain flour
- ½ tsp baking soda
- 1½ tsp baking powder
- ½ tsp sea salt (optional)
- 180ml water
- 80ml honey
- 1 large egg
- 60ml applesauce
- 75g dried apricots, chopped
- 100g cranberries, chopped
Directions
- Preheat oven to 180°C. Spray a 21 × 11cm loaf pan with cooking spray.
- Combine flours, baking soda, baking powder and sea salt in a mixing bowl. Set aside.
- Add water, honey, egg and applesauce to the Vitamix container in the order listed. Secure the lid and blend on the highest speed for 15 seconds.
- Add the dry mixture to the container. Blend on the highest speed for 20 seconds, using the tamper as needed.
- Fold in the apricots and cranberries.
- Pour the batter into the prepared pan. Bake for 45–60 minutes or until a knife inserted into the centre comes out clean.
