Carrot Cake Energy Balls

Delicious carrot cake bliss balls. Healthy, no bake and made under 20 minutes.

Ingredients
- 2 carrots
- 1 teaspoon cinnamon powder
- ½ teaspoon ground nutmeg
- 250g pitted dates
- 1 ½ cups walnuts
- 1 cup almonds
- 1 cup shredded coconut
- Coating (optional) - White chocolate and freeze-dried orange
Directions
- Soak pitted dates in warm water for 5 minutes.
- Place walnuts, almonds, coconut shreds cinnamon and nutmeg in your Vitamix Dry Grains Container
- Process the ingredients at speed 6-7 for 30 seconds or until ingredients are broken into small pieces. (not too fine)
- Shred the carrots.
- Add to your 2.0 Litre Vitamix container pre-soaked dates, grated carrots, nut and coconut mixture and blend together until all ingredients mix.
- Place blended mixture into a fridge for 10 minutes before rolling it into balls.
- Dip each chocolate in melted white chocolate and garnish with small walnut pieces
- and freeze-dried orange pieces. (optional)
- Chill in the freezer until chocolate sets, then transfer to fridge.
