Carrot Cake Energy Balls

Delicious carrot cake bliss balls. Healthy, no bake and made under 20 minutes.

Ingredients

  • 2 carrots
  • 1 teaspoon cinnamon powder
  • ½ teaspoon ground nutmeg
  • 250g pitted dates
  • 1 ½ cups walnuts
  • 1 cup almonds
  • 1 cup shredded coconut
  • Coating (optional) - White chocolate and freeze-dried orange

Directions

  1. Soak pitted dates in warm water for 5 minutes.
  2. Place walnuts, almonds, coconut shreds cinnamon and nutmeg in your Vitamix Dry Grains Container
  3. Process the ingredients at speed 6-7 for 30 seconds or until ingredients are broken into small pieces. (not too fine)
  4. Shred the carrots.
  5. Add to your 2.0 Litre Vitamix container pre-soaked dates, grated carrots, nut and coconut mixture and blend together until all ingredients mix.
  6. Place blended mixture into a fridge for 10 minutes before rolling it into balls.
  7. Dip each chocolate in melted white chocolate and garnish with small walnut pieces
  8. and freeze-dried orange pieces. (optional)
  9. Chill in the freezer until chocolate sets, then transfer to fridge.
