Create fresher, more flavourful cashew milk at home. This recipe yields 4 1/2 cups of milk from just 1 cup of nuts.

- 720 ml (3 cups) water
- 140 g (1 cup) cashews
- 70 g (10 ) dates, pitted
- ¼ teaspoon ground cinnamon
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40 seconds.
For even more creaminess, soak cashews for at least 4 hours. You may strain the nut milk through a fine mesh strainer to remove the sediment, if you like. Store in an airtight container in the refrigerator for up to a week. Shake before serving. Our frozen dessert recipes will work perfectly by swapping this out for the liquid component.
