Honey Lavender Nice Cream

This naturally sweet and creamy dairy-free dessert is a cool, refreshing way to enjoy lavender's delicate floral flavour.

Ingredients

  • 1/3 cup (80ml) unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1½ tsp dried lavender
  • ½ tbsp lemon zest
  • 680g frozen bananas
  • 3 tbsp (45ml) honey

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Frozen Dessert Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30-40 seconds, using the tamper to push ingredients towards the blades.
  3. In about 25-35 seconds, the sound of the motor will change and four mounds should form. Stop the machine. Do not overmix or melting will occur. Serve immediately.

Garnish with lavender flowers (dried or fresh). This delicious banana-based dessert is packed with rich flavour, creamy texture and essential vitamins and minerals, while being low in saturated fat and added sugar. You can easily adjust the sweetness to suit your taste.
