Levantine Cauliflower Ingredients

  • 35 g sesame seeds
  • ¼ teaspoon cumin seeds
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon paprika
  • 1 pinch ground cardamom
  • ¼ teaspoon coriander seeds
  • 450 g steamed or roasted cauliflower, cut into florets (about ½ head)
  • 25 g lemon, peeled
  • 1 garlic clove (or ½ teaspoon garlic powder)
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon salt, optional
  • ¼ teaspoon sumac
  • ¼ teaspoon dried mint

        Directions

        1. Place the first six ingredients, up until the cauliflower, into a small skillet set over medium-low heat. Toast until fragrant and aromatic.
        2. Once the spices and seeds are toasted, place the cauliflower and all remaining ingredients, including the spice mixture, into the Vitamix container and secure the lid.
        3. Start the blender on its lowest speed, then quickly increase it to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades.
