Nola's Garam Masala

Ingredients
- 240 ml (1 cup) water
- 100g sugar OR 12 dates
- ½ cup coriander seeds
- ¼ cup cumin seeds
- 2 tbsp green cardamom
- 2 tbsp cloves
- 1 tbsp black peppercorns
- 8 x 6cm Ceylon cinnamon sticks
Optional Aromatics:
- 4 dried bay leaves
- 3 star anise
- 1 tbsp fennel seeds
- 1–2 black cardamom pods
Directions
- Toast spices in a dry pan until fragrant. Cool completely.
- Blend in small batches in the Vitamix dry jug. Start on Variable 1, increase to 10, and blend for 20 seconds.
- Store in an airtight jar.
