Ingredients

  • 240 ml (1 cup) water
  • 100g sugar OR 12 dates
  • ½ cup coriander seeds
  • ¼ cup cumin seeds
  • 2 tbsp green cardamom
  • 2 tbsp cloves
  • 1 tbsp black peppercorns
  • 8 x 6cm Ceylon cinnamon sticks

Optional Aromatics:

  • 4 dried bay leaves
  • 3 star anise
  • 1 tbsp fennel seeds
  • 1–2 black cardamom pods

Directions

  1. Toast spices in a dry pan until fragrant. Cool completely.
  2. Blend in small batches in the Vitamix dry jug. Start on Variable 1, increase to 10, and blend for 20 seconds.
  3. Store in an airtight jar.
