Pistachio Ice Cream

Creamy pistachio ice cream with only 5 ingredients. No ice cream maker needed.

Ingredients - Pistachio Paste

  • 350g pistachios
  • 1/4 cup maple syrup

Ingredients - Ice Cream

  • 1 cup pistachio paste
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla essence
  • 500ml thickened cream
  • 150ml whipped cream

Directions

  1. First make pistachio paste by blending pistachios and maple syrup at speed 10 for 5 minutes. Ensure to use the tamper.
  2. Add to your blender whipping cream, double cream, vanilla essence, maple syrup and pistachio paste. Blend at speed 2-3 for 20 seconds or until thick texture. Don’t over blend.
  3. Transfer to freeze proof dish and freeze overnight.
  4. Garnish with pistachios and maple syrup or honey.
