  • 1 cup Almond Meal
  • 3/4 cup Oat Flour
  • 1/4 cup Protein Powder
  • 1/4 cup Maple Syrup
  • 1/4 cup Almond Milk
  • 3 tbs Peanut Butter
  • Cacao Nibs to taste


  • 1 cup Dates (soaked)
  • 1/4 cup Almond Milk
  • 2 tbs Coconut Oil
  • 1 tbs Peanut Butter
  • Chopped Peanuts to taste


  • 40g Dark Chocolate (melted)


  1. Preheat oven to 180°c.
  2. Add ingredients for cookie cups to a bowl and stir until combined and a thick dough forms.
  3. Press into silicone muffin moulds in a cup shape. Bake for 20 minutes and leave at room temperature to firm. Put in the fridge to cool.
  4. Make caramel by adding dates, almond milk, coconut oil and peanut butter to the Vitamix container and blend until smooth. Fold in peanuts.
  5. Fill cooled cookie cups with caramel mixture and top with melted chocolate. Put back in the fridge to set.


store in the fridge for up to 5 days.
