Sweet Peanut Butter Filling

Ingredients
- 425g roasted peanuts
- 1½ tbsp unsalted butter, softened (optional)
- 45g icing sugar
- ½ tsp sea salt (optional)
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Nut Butter Program, or start on the lowest speed and quickly increase to the highest speed.
- Blend for 60 seconds, or until the desired consistency is reached, using the tamper to push ingredients toward the blades.
- Use immediately, or refrigerate until ready to fill chocolates or desserts.
Recipe Notes
- For a crunchy texture, blend for a shorter time.
- For an ultra-smooth filling, blend for at least 1 full minute.
- Leftover filling can be stored refrigerated in an airtight container for up to 3 weeks, or frozen for up to 3 months.
- Delicious paired with fruit jam for PB&J-inspired treats, or used in cakes, cookies, tarts, donuts, cheesecake and ice cream.
