Sweet Peanut Butter Filling

Ingredients

  • 425g roasted peanuts
  • 1½ tbsp unsalted butter, softened (optional)
  • 45g icing sugar
  • ½ tsp sea salt (optional)

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Nut Butter Program, or start on the lowest speed and quickly increase to the highest speed.
  3. Blend for 60 seconds, or until the desired consistency is reached, using the tamper to push ingredients toward the blades.
  4. Use immediately, or refrigerate until ready to fill chocolates or desserts.

Recipe Notes

  • For a crunchy texture, blend for a shorter time.
  • For an ultra-smooth filling, blend for at least 1 full minute.
  • Leftover filling can be stored refrigerated in an airtight container for up to 3 weeks, or frozen for up to 3 months.
  • Delicious paired with fruit jam for PB&J-inspired treats, or used in cakes, cookies, tarts, donuts, cheesecake and ice cream.
