Zero Proof Cucumber Gimlet

Ingredients
- 120 ml water
- 4 limes, peeled
- 60 ml honey
- 30 ml champagne vinegar
- 6-8 slices (6mm thick), cucumber
- 260 g ice cubes, plus extra for serving
- 120 ml soda water
Directions

For the base:
Place the water, limes, honey and champagne vinegar into the blending container in the order listed and secure the lid. Start the blender on its lowest speed and increase quickly to its highest speed. Blend for 60 seconds. Strain if desired. -
For the cocktail:
Place 1 cup of the blended base into the container with cucumber and ice. Secure lid. Blend on highest speed for 25–30 seconds. Fill two cocktail glasses with ice, split the blended mixture between the two glasses and top with club soda. Stir and garnish with a slice or peeling of cucumber. - The gimlet can be served over ice or simply in a chilled gimlet glass.
