Blueberry & Coconut Slice

  • ½ cup coconut milk

  • ¼ cup raw honey
  • ½ tsp vanilla extract
  • 1 cup frozen blueberries
  • 2 cups chopped nuts
  • ½ cup desiccated coconut
  • ¼ tsp sea salt
  • ¼ cup white/black chia seeds
  • ½ cup desiccated coconut to top


    1. Place the above ingredients into the Vitamix blender and blend until combined, using the tamper to mix the ingredients as you go.

    2. With a spatula, remove the mixture and place it on a lined tray, smoothing it down as you go, and top the mixture with chia seeds and coconut.
    3. Place in the freezer for 30 minutes then bring to room temperature to slice and enjoy with tea or hot chocolate!
