Citrus Butter

Ingredients

  • 720ml heavy cream
  • ¾ tsp sea salt (optional)
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 1 tsp orange zest
  • 12 sprigs Italian flat-leaf parsley, leaves only

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed. Blend until the mixture thickens and stops circulating (whipped cream stage).
  3. Continue blending for 30–45 seconds while using the tamper to press ingredients toward the blades. The mixture will separate into butter solids and buttermilk.
  4. Blend for an additional 30–45 seconds until fully separated.
  5. Pour into a fine mesh strainer over a bowl and refrigerate for 4 hours or overnight to drain.
  6. Store in an airtight container. Reserve the buttermilk for baked goods.
