
Go green with this stimulating version of a classic Gimlet by muddling fresh rocket and fennel.

Ingredients
- 180ml gin
- 90ml simple syrup
- 2 (130g) lime, sliced thin, ends discarded
- 1 cup (20g) rocket
- ¼ cup (15g) fennel fronds
- 2 cups (250g) ice cubes
Directions
- Place all ingredients into the AER* Disc Container in the order listed and secure the lid.
- Start the blender on its lowest speed, then increase to its highest speed. Blend for 40 seconds, using the tamper to push ingredients toward the blades.
- Prepare two cocktail glasses - coupe glasses work great.
- Using a mesh sieve, strain the cocktail into the glasses and enjoy!
Chef's Note
Garnish with fresh fennel fronds. This cocktail pairs beautifully with light pasta and fresh seafood.
