Ingredients For Salad Dressing
- 1 cup coconut yoghurt / Greek yoghurt
- 2 tablespoons maple syrup
- 1 lime juice
- ⅓ cup extra virgin olive oil
- Handful of dill
- Salt and pepper
- 1 tablespoon Dijon mustard
- ½ avocado
Ingredients For Salad
- 2 cups rocket salad
- 1 cucumber
- 10 cherry tomatoes
- ¼ red onion
- 1 ½ cups cooked pasta
- 1 ½ cups chickpeas

16 green olives (pitted)
Directions
- Make a salad dressing by adding to your Vitamix blender yoghurt, maple syrup, lime juice, extra virgin olive oil, Dijon mustard, avocado, dill, salt and pepper.
- Blend until you’ve achieved a smooth consistency at speed 4-5 for 30 seconds or use the Dips & Spreads setting on your Vitamix.
- Place the following ingredients in the glass jar: salad dressing, chickpeas, pasta, cherry tomatoes, olives, red onion, baby bocconcini, cucumber and rocket salad.
- Store in the fridge.
