Healthy pasta salad jars ready for lunch! Packed with fibre and protein, these jars feature a tangy dill and avocado dressing.

Ingredients For Salad Dressing

  • 1 cup coconut yoghurt / Greek yoghurt
  • 2 tablespoons maple syrup
  • 1 lime juice
  • ⅓ cup extra virgin olive oil
  • Handful of dill
  • Salt and pepper
  • 1 tablespoon Dijon mustard
  • ½ avocado

Ingredients For Salad 

  • 2 cups rocket salad
  • 1 cucumber
  • 10 cherry tomatoes
  • ¼ red onion
  • 1 ½ cups cooked pasta
  • 1 ½ cups chickpeas
  • 16 green olives (pitted)

Directions

  1. Make a salad dressing by adding to your Vitamix blender yoghurt, maple syrup, lime juice, extra virgin olive oil, Dijon mustard, avocado, dill, salt and pepper.
  2. Blend until you’ve achieved a smooth consistency at speed 4-5 for 30 seconds or use the Dips & Spreads setting on your Vitamix.
  3. Place the following ingredients in the glass jar: salad dressing, chickpeas, pasta, cherry tomatoes, olives, red onion, baby bocconcini, cucumber and rocket salad.
  4. Store in the fridge.
