Lychee Frozen Cocktail

Empress Gin gives this cocktail a magical change of colour for a beverage that's as visually exciting as it is delicious.

Ingredients
- ½ can (130g) lychees, with syrup
- 1 lemon, peeled
- 1 tbsp honey
- 2 cups (260g) ice cubes
- 120ml Empress 1908 Gin (or herbal tea), divided
Directions
- Place all ingredients except gin into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45–55 seconds, using the tamper to push ingredients toward the blades.
- Pour slushy into two glasses and top each glass with 60ml of Empress Gin.
