Lychee Frozen Cocktail

Empress Gin gives this cocktail a magical change of colour for a beverage that's as visually exciting as it is delicious.

Ingredients

  • ½ can (130g) lychees, with syrup
  • 1 lemon, peeled
  • 1 tbsp honey
  • 2 cups (260g) ice cubes
  • 120ml Empress 1908 Gin (or herbal tea), divided

      Directions

      • Place all ingredients except gin into the Vitamix container in the order listed and secure the lid.
      • Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45–55 seconds, using the tamper to push ingredients toward the blades.
      • Pour slushy into two glasses and top each glass with 60ml of Empress Gin.
