    Notes

When using alternative flours, measuring by weight instead of volume helps tremendously as each flour absorbs liquid differently. The batter can be adjusted with more flour or liquid as needed. Select an alternative flour according to your taste - each has its own flavour profile, bean flours are very savoury while oat flour has a mild flavour, for example.
