Ingredients

  • 300ml milk (or non-dairy milk)
  • 30ml maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 60ml unsalted butter (or coconut oil), melted
  • 2 eggs (90g)
  • 150g rolled oats
  • 90g plain flour (or gluten-free flour)
  • 1½ tsp baking powder
  • ½ tsp sea salt (optional)

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed. Blend for 20 seconds, or until completely smooth.
  3. Allow the batter to rest in the container with the lid on for 10 minutes.
  4. Preheat waffle iron to 190°C or medium-high heat.
  5. Cook waffles according to the waffle maker instructions.
  6. Place cooked waffles on a wire rack while preparing remaining batter.
  7. Serve warm.

Recipe Notes

  • Serve with maple syrup, fresh berries or whipped cream.
  • Resting the batter helps improve texture and consistency.
  • For best results, ensure flour is measured accurately.
