Sun-dried tomato pesto
While regular green pesto is of course delish sun-dried tomatoes are little nutritional powerhouses, rich in many nutrients you might not expect, such as zinc. Created by @wellnesswithvic

Ingredients
- 1/3 cup pine nuts
- 1 cup sun-dried tomatoes, oil drained
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon chilli flakes
- 1/2 cup fresh basil leaves
- 1/2 cup grated pecorino cheese (use parmesan if not available)
- Splash water
- Juice 1/2 lemon
- 1/4-1/2 cup extra virgin olive oil
- Freshly ground black pepper, to taste
Directions
- Add all ingredients to Vitamix (start with 1/4 cup olive oil). Blend until a smooth pesto with a little texture remaining forms. Add in remaining 1/4 cup of olive oil if required to achieve desired texture.
- Pour into a jar and store in fridge. Tastes delicious stirred through pasta (penne or spaghetti work well), or risotto, added to avocado toast, or served on a platter with crackers and veggie sticks.
