Vegan Cashew Custard

  • 150 g cashews, soaked
  • 150 ml plant-based milk
  • 1 Tablespoon vanilla bean paste
  • 3 Tablespoons maple syrup


  1. Soak the cashews for 2 – 3 hours in advance.
  2. Drain, rinse and squeeze out the excess water from the cashews.
  3. Add the cashews, plant-based milk, vanilla bean paste, and the 3 Tablespoons of maple syrup to the Vitamix blender.
  4. Start the blender on its lowest speed, then quickly increase to its highest speed and blend until completely smooth.
  5. If you wish to serve hot, gently heat in a pot, stirring continually for 2 – 3 minutes.
