Zucchini Noodles

Ingredients

  • Kale
  • Teaspoon of dry basil 
  • ⅓ cup pecan nuts
  • ⅓ cup cashews
  • ¼ cup nutritional yeast
  • ¼ cup tahini
  • Roasted garlic cloves
  • Salt and pepper
  • 1 teaspoon turmeric powder mixed with
  • 1 ⅓ cup water from boiling kale

Directions

  1. Boil four kale leaves (stems removed) for 5 minutes or until soft.
  2. Roast the garlic cloves for 30 minutes or until lightly brown.
  3. Spiralise two large zucchinis to create the noodles.
  4. Add the ingredients listed above into the Vitamix blender jug and blend until well combined.
  5. Combine the kale sauce with zucchini noodles.
  6. Enjoy with black pepper, chilli, and sesame seeds as a garnish.
