Zucchini Noodles

Ingredients
- Kale
- Teaspoon of dry basil
- ⅓ cup pecan nuts
- ⅓ cup cashews
- ¼ cup nutritional yeast
- ¼ cup tahini
- Roasted garlic cloves
- Salt and pepper
- 1 teaspoon turmeric powder mixed with
- 1 ⅓ cup water from boiling kale
Directions
- Boil four kale leaves (stems removed) for 5 minutes or until soft.
- Roast the garlic cloves for 30 minutes or until lightly brown.
- Spiralise two large zucchinis to create the noodles.
- Add the ingredients listed above into the Vitamix blender jug and blend until well combined.
- Combine the kale sauce with zucchini noodles.
- Enjoy with black pepper, chilli, and sesame seeds as a garnish.
