Apple Ring Pancakes

Ingredients
- 2 eggs
- 190g self-raising flour
- 1 tbsp maple syrup
- 1 tsp vanilla essence
- 180ml milk
- 225g cottage cheese
- 2–3 apples, sliced into rings with cores removed
- extra virgin olive oil, for cooking
- cinnamon sugar or maple syrup, to serve
Directions
- Place eggs, milk, cottage cheese, maple syrup and vanilla essence into the Vitamix container and secure the lid.
- Blend on Variable 5 for 20 seconds.
- Add the self-raising flour and blend on Variable 6 for a further 20 seconds, or until smooth.
- Slice the apples into rings and remove the cores.
- Heat a frying pan over low heat and lightly coat with extra virgin olive oil.
- Dip each apple ring into the batter, ensuring it is evenly coated.
- Place into the pan and cook until golden brown on one side, then flip and cook until golden on the other side.
- Serve warm with cinnamon sugar or maple syrup.
Recipe Notes
- Cottage cheese adds extra protein and creates a light, fluffy texture.
- Pink Lady, Jazz or Honeycrisp apples work particularly well.
- For extra flavour, add ½ tsp ground cinnamon to the batter before blending.
- Best served fresh while warm and crisp.
