Frank Fawkner's Banana, Cacao & Roasted Macadamia Butter Smoothie

Developed by chef Frank Fawkner of two-hatted EXP. Restaurant, this smoothie blends ripe banana, cacao, and roasted macadamia butter into a rich, nourishing treat. The Vitamix powers through chia for an ultra-smooth, creamy texture—perfect for a luxe breakfast or wholesome snack.

Ingredients
- 200g ripe banana (about 2 small bananas), peeled and sliced
- 20g roasted macadamia butter
- 10g cacao powder (unsweetened)
- 10g honey (adjust to taste)
- 10g chia seeds
- 120g ice cubes
- 150ml cold filtered water (or milk/plant milk for extra creaminess)
- Pinch of salt (optional, enhances flavour)
Directions
1. Combine Ingredients
- Preheat oven to 160°C.
- Place all ingredients into the Vitamix container in the order listed.
- Add a pinch of salt if using.
2. Blend in the Vitamix
- Use the Smoothie Program or start the Vitamix blender on its lowest speed and gradually increase to its highest speed.
- Blend for 45–60 seconds until completely smooth and creamy. The Vitamix will break down the chia for a silky texture.
3. Taste & Adjust
- Check sweetness and consistency; add more honey or a splash more water/milk if needed, and blend briefly again.
4. Serve
- Pour into chilled glasses.
- Garnish with a dusting of cacao powder or a few crushed roasted macadamias if desired.
