Ingredients – 2-litre container
  • 1l cold heavy cream
  • ¼ tsp salt (optional)
Ingredients – 1.4-litre container
  • 480ml cold heavy cream
  • ⅛ tsp salt (optional)

Directions

  1. Place the cream into the Vitamix container and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed. Blend until the mixture thickens and stops circulating (whipped cream stage).
  3. Continue blending for 30–45 seconds while using the tamper. The mixture will separate into butter solids and buttermilk.
  4. Continue blending for another 30–45 seconds to fully separate the buttermilk.
  5. Pour into a fine mesh strainer set over a bowl. Refrigerate for 4 hours or overnight to drain.
  6. Store in an airtight container. Reserve the buttermilk for baking.

Recipe Notes

  • Flavour variations: add herbs, cinnamon, or sun-dried tomatoes in Step 1.
  • If the butter looks curdled, keep blending until fully separated.
