Directions
- Place the cream into the Vitamix container and secure the lid.
- Start on the lowest speed, then quickly increase to the highest speed. Blend until the mixture thickens and stops circulating (whipped cream stage).
- Continue blending for 30–45 seconds while using the tamper. The mixture will separate into butter solids and buttermilk.
- Continue blending for another 30–45 seconds to fully separate the buttermilk.
- Pour into a fine mesh strainer set over a bowl. Refrigerate for 4 hours or overnight to drain.
- Store in an airtight container. Reserve the buttermilk for baking.
Recipe Notes
- Flavour variations: add herbs, cinnamon, or sun-dried tomatoes in Step 1.
- If the butter looks curdled, keep blending until fully separated.
