Easter Chocolate Nest Mousse

Ingredients
- 2 avocados
- ⅓ cup raw cacao
- ⅔ cup raw cashews
- 125ml plant milk (oat, almond, soy or coconut)
- ½ tsp vanilla paste
- ¼ cup + 1 tbsp maple syrup (or sweetener of choice)
- 1 pinch sea salt
Easter toppings
- 100g shaved dark chocolate
- 1 punnet raspberries
- toasted coconut flakes or shredded coconut
- mini Easter eggs or chocolate-coated nuts (optional)
Directions
- Place avocado, cacao, cashews, plant milk, maple syrup, vanilla and sea salt into the Vitamix container and secure the lid.
- Start on Variable 3 and blend for 10 seconds, then increase to Variable 8.
- Use the tamper to push the mixture toward the blades until a thick, silky mousse forms.
- Add half of the shaved chocolate. Reduce to Variable 1 and blend for 5 seconds to combine.
- Spoon the mousse into serving glasses or small bowls.
- Top with remaining chocolate, raspberries and coconut to create a nest effect.
- Finish with mini Easter eggs or chocolate-coated nuts in the centre and serve.
Recipe Notes
- For extra smooth texture, soak cashews in warm water for 10–15 minutes before blending.
- Adjust sweetness by adding more or less maple syrup.
- Best served immediately or chilled for a thicker texture.
