Garlic & Herb Butter

Ingredients
- 345g unsalted butter (or vegan butter), softened
- 2 garlic cloves, peeled and crushed
- ½ tsp sea salt (optional)
- ¼ tsp ground black pepper
- 2 tbsp fresh parsley leaves
- 1 tbsp fresh thyme leaves
- 2 tbsp fresh chives, chopped
Directions
- Place softened butter, garlic, salt (if using) and black pepper into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
- Remove the lid and add parsley, thyme and chives.
- Secure the lid and start on the lowest speed, then quickly increase to the highest speed. Blend for 10–15 seconds, using the tamper as needed, until herbs are evenly incorporated.
- Transfer butter to an airtight container, or roll into a log using baking paper or plastic wrap and chill until firm.
Recipe Notes
- Slice into pats and serve with bread, steak, seafood, vegetables or potatoes.
- Store refrigerated for up to 10 days or freeze for up to 3 months. Ice cube trays work well for portioning.
