Ingredients

  • 345g unsalted butter (or vegan butter), softened
  • 2 garlic cloves, peeled and crushed
  • ½ tsp sea salt (optional)
  • ¼ tsp ground black pepper
  • 2 tbsp fresh parsley leaves
  • 1 tbsp fresh thyme leaves
  • 2 tbsp fresh chives, chopped

Directions

  1. Place softened butter, garlic, salt (if using) and black pepper into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
  3. Remove the lid and add parsley, thyme and chives.
  4. Secure the lid and start on the lowest speed, then quickly increase to the highest speed. Blend for 10–15 seconds, using the tamper as needed, until herbs are evenly incorporated.
  5. Transfer butter to an airtight container, or roll into a log using baking paper or plastic wrap and chill until firm.

Recipe Notes

  • Slice into pats and serve with bread, steak, seafood, vegetables or potatoes.
  • Store refrigerated for up to 10 days or freeze for up to 3 months. Ice cube trays work well for portioning.
