Green Goddess Salad

Ingredients

Dressing

  • 2 avocados
  • 2 garlic cloves
  • 3 spring onion bases (reserve green tops for salad)
  • ½ bunch basil
  • ½ bunch mint
  • ½ bunch dill
  • 2 tbsp Dijon mustard
  • zest and juice of 2 lemons
  • 50ml olive oil
  • flaky sea salt, to taste
  • 1 tsp honey

Salad

  • 3 spring onion green tops, finely sliced
  • ½ bunch basil, finely sliced
  • ½ bunch mint, finely sliced
  • ½ bunch dill, finely sliced
  • 280g spinach
  • 1 bunch kale, stems removed and finely sliced
  • 2 green chillies, sliced (optional)
  • macadamias (or preferred nuts), crushed

Directions

  1. Place macadamias into the Vitamix container and pulse until roughly crushed. Set aside.
  2. Add avocados, garlic, spring onion bases, basil, mint, dill, Dijon mustard, lemon zest and juice, and olive oil to the Vitamix container. Blend until smooth.
  3. Season with salt and honey, blending again to balance the flavour.
  4. Finely slice all salad ingredients and place into a large bowl.
  5. Add dressing just before serving, toss well, and top with crushed macadamias.

Recipe Notes

  • Balance the dressing each time, lemons vary in acidity, herbs vary in intensity, and the flavour should be adjusted to taste.
