Homemade Granola

Ingredients

  • 60g almonds (or cashews)
  • 50g pecans (or walnuts)
  • 35g pumpkin seeds (or sesame seeds)
  • 35g sunflower seeds
  • 150g rolled oats
  • ¼ tsp ground cinnamon
  • ¼ tsp sea salt (optional)
  • 60ml melted coconut oil (or avocado oil)
  • ½ tbsp vanilla extract
  • 45ml maple syrup (or honey, optional)
  • 60g dried cranberries (or dried cherries or raisins)

Directions

  1. Preheat oven to 150°C. Line a baking tray with baking paper or a silicone mat.
  2. Place almonds, pecans, pumpkin seeds, sunflower seeds, oats, cinnamon and salt (if using) into the Vitamix container and secure the lid.
  3. Select Variable 6 and pulse 3–4 times until chopped to your desired texture.
  4. Transfer mixture to a large bowl. Add melted coconut oil, vanilla and maple syrup. Mix well until evenly coated.
  5. Spread mixture evenly onto the prepared tray.
  6. Bake for 25 minutes, or until golden and slightly dry to the touch.
  7. Allow granola to cool completely in the tray for about 25 minutes to form clusters.
  8. Break into clusters and stir through dried cranberries before serving.

Recipe Notes

  • Store in an airtight container in a cool, dry place for up to 2 weeks.
  • Customise with your favourite nuts, seeds or add coconut flakes.
  • Add dark chocolate chunks after baking for a sweeter variation.
