Homemade Granola

Ingredients
- 60g almonds (or cashews)
- 50g pecans (or walnuts)
- 35g pumpkin seeds (or sesame seeds)
- 35g sunflower seeds
- 150g rolled oats
- ¼ tsp ground cinnamon
- ¼ tsp sea salt (optional)
- 60ml melted coconut oil (or avocado oil)
- ½ tbsp vanilla extract
- 45ml maple syrup (or honey, optional)
- 60g dried cranberries (or dried cherries or raisins)
Directions
- Preheat oven to 150°C. Line a baking tray with baking paper or a silicone mat.
- Place almonds, pecans, pumpkin seeds, sunflower seeds, oats, cinnamon and salt (if using) into the Vitamix container and secure the lid.
- Select Variable 6 and pulse 3–4 times until chopped to your desired texture.
- Transfer mixture to a large bowl. Add melted coconut oil, vanilla and maple syrup. Mix well until evenly coated.
- Spread mixture evenly onto the prepared tray.
- Bake for 25 minutes, or until golden and slightly dry to the touch.
- Allow granola to cool completely in the tray for about 25 minutes to form clusters.
- Break into clusters and stir through dried cranberries before serving.
Recipe Notes
- Store in an airtight container in a cool, dry place for up to 2 weeks.
- Customise with your favourite nuts, seeds or add coconut flakes.
- Add dark chocolate chunks after baking for a sweeter variation.
