Place all ingredients into the Vitamix container in the order listed and secure the lid.
Start on the lowest speed, then quickly increase to the highest speed. Blend until the mixture thickens and stops circulating (whipped cream stage).
Continue blending for 30–45 seconds while using the tamper to press ingredients toward the blades. The mixture will separate into butter solids and buttermilk.
Blend for an additional 30–45 seconds to fully separate the buttermilk.
Pour into a fine mesh strainer set over a bowl and refrigerate for 4 hours or overnight to drain.
Store the butter in an airtight container. Reserve buttermilk for baking.
