Pickle Dip

Ingredients

  • 120ml sour cream
  • 225g cream cheese
  • ½ tsp Dijon mustard
  • 3 small garlic cloves
  • 150g dill pickles, drained
  • 3 tbsp fresh dill
  • ½ tsp sea salt (optional)
  • ½ tsp ground black pepper

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed.
  3. Blend for 10–20 seconds, using the tamper to push ingredients toward the blades, until smooth and creamy.
  4. Transfer to a serving bowl and garnish with additional chopped pickles and fresh dill if desired.

Recipe Notes

  • Do not overblend, as the dip may thin into more of a dressing.
  • Perfect served with vegetable sticks, crackers or potato crisps.
