Ingredients
- 4 large eggs, room temperature
- 180ml whole milk, lukewarm (about 40°C)
- ¾ tsp sea salt (optional)
- 165g plain flour, sifted
- 45ml unsalted butter, melted
- non-stick cooking spray or extra butter, for greasing
Directions
- Place eggs, milk and salt (if using) into the Vitamix container and secure the lid.
- Start on the lowest speed, then quickly increase to the highest speed. Blend for 15 seconds.
- Reduce to Variable 3 and remove the lid plug. While blending, carefully add the flour through the lid plug opening and blend for 10 seconds, or until just smooth.
- Add the melted butter and blend for another 10 seconds. Stop the machine and replace the lid plug.
- Allow the batter to rest for at least 30 minutes.
- Preheat oven to 232°C. Place a 6-slot popover pan (or 12-cup muffin pan) on a baking tray and preheat in the oven.
- Carefully remove the hot pan and generously grease with cooking spray or butter. Quickly pour the rested batter evenly into each slot.
- Bake for 16 minutes without opening the oven door.
- Reduce oven temperature to 175°C (without opening the door) and bake for another 16 minutes, or until tall and deep golden brown.
- Remove from oven and immediately pierce the tops or sides with a small knife to release steam. Serve immediately.
Recipe Notes
- Use room temperature ingredients and a fully preheated pan for maximum rise.
- Avoid opening the oven door during baking, as temperature drops can cause collapse.
- Reheat at 175°C to restore crispness.
