Spiced Cauliflower Fritters With Mango Mayonnaise

Ingredients
Spiced Cauliflower Fritters
1 carrot Small bunch spring onions ½ small or ¼ large cauliflower ½ cup quinoa 1 garlic clove ½ cup plant-based milk ½ cup besan flour 1 teaspoon paprika 1 teaspoon cumin ½ teaspoon turmeric 1 teaspoon curry powder Salt Pepper - 2 Tablespoons olive oil
Mango Mayonnaise
4 Tablespoons of vegan mayonnaise 50 g mango -
1 teaspoon mild curry powder
Directions
- Cook the quinoa in accordance with the instructions on the packet.
Peel carrot and roughly cut. -
Cut the cauliflower into smaller pieces. -
Rou ghly chop the spring onions. -
Place the carrots, cauliflower, spring onion , garlic and cooked quinoa into the Vitamix. Blend for 6 –8 seconds on speed 6. Do not pur ee the mixture. -
In a b owl add the besan flour, paprika, turmeric and cumin . Using a whisk, mix to evenly disperse the spices. -
Add the milk and whisk together to remove any lumps. Season with salt and freshly cracked black pepper. -
Add the cauliflower mixture into the besan flour mix ture and mix thoroughly. -
Using your hands, create small fritters compressing well together. -
Heat a large heavy-based frying pan and add two Tablespoons of olive oil to the pan. Place each of the fritters into the pan and cook on each side for 2 – 3 minutes. To make the Mango Mayonnaise, combine the mayonnaise, mango and curry powder. Mix together well to remove lumps. - Serve fritters with Mango Mayonnaise.
