Vegan Cheese

Ingredients

  • 1¼ cups cashews, soaked 3 hours, rinsed
  • ¼ cup macadamia (or Brazil) nuts, soaked 3 hours, rinsed
  • ¼ cup water
  • ¼ cup lemon juice
  • 1½ tbsp nutritional yeast
  • ¼ shallot, finely chopped
  • 1 garlic clove
  • 1 tbsp each chopped chives, parsley, dill
  • Salt and pepper to taste

Directions

  1. Add nuts, water, lemon juice and nutritional yeast to the Vitamix jug.
  2. Select Purée or start on Variable 1, increase to 10. Blend until smooth, using the tamper as needed. Add up to ¼ cup extra water if the mixture is too thick.
  3. Transfer to a bowl and fold in the shallot, garlic, herbs, salt and pepper.
  4. Serve on seeded crackers, bread, salads or veggies.
