Winter Gummies

Ingredients
- 240ml elderberry tea, brewed and cooled
- Flesh of 3 oranges
- 1 pink pitaya
- 1 small piece fresh ginger
- 150g frozen strawberries
- Pulp of 2 passionfruit
- Gelatine, bloomed according to packet instructions
Directions
- Place the elderberry tea, oranges, pitaya, ginger, strawberries and passionfruit into the Vitamix container in the order listed and secure the lid.
- Blend on Variable Speed 8 for 40 seconds, or until completely smooth.
- Bloom the gelatine according to the packet instructions.
- Whisk the blended fruit mixture into the bloomed gelatine until well combined.
- Pour into silicone gummy moulds.
- Refrigerate until completely set.
- Remove from the moulds and store refrigerated until ready to enjoy.
Recipe Notes
- Store in an airtight container in the refrigerator for up to 1 week.
- For a vegetarian version, substitute gelatine with agar agar, following the packet instructions.
- Use fun-shaped silicone moulds to make these perfect for kids and lunchboxes.
