Blackberry Chia Fruit Spread

Ingredients
- 250g blackberries
- 20g chia seeds
- 1 tsp fresh lemon juice
- 1½ tbsp honey or maple syrup (optional)
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed.
- Blend for 60 seconds, using the tamper to push ingredients toward the blades, until smooth and thickened.
- Transfer the fruit spread to an airtight container.
- Refrigerate for at least 1 hour to allow the chia seeds to fully thicken before serving.
Recipe Notes
- Frozen, thawed blackberries work well if fresh are unavailable.
- Adjust sweetness and acidity by adding more or less honey and lemon juice.
- Store refrigerated for up to 2 weeks, or freeze for up to 3 months.
- Try substituting blackberries with strawberries, raspberries or mixed berries.
