Blackberry Chia Fruit Spread

Ingredients

  • 250g blackberries
  • 20g chia seeds
  • 1 tsp fresh lemon juice
  • 1½ tbsp honey or maple syrup (optional)

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed.
  3. Blend for 60 seconds, using the tamper to push ingredients toward the blades, until smooth and thickened.
  4. Transfer the fruit spread to an airtight container.
  5. Refrigerate for at least 1 hour to allow the chia seeds to fully thicken before serving.

Recipe Notes

  • Frozen, thawed blackberries work well if fresh are unavailable.
  • Adjust sweetness and acidity by adding more or less honey and lemon juice.
  • Store refrigerated for up to 2 weeks, or freeze for up to 3 months.
  • Try substituting blackberries with strawberries, raspberries or mixed berries.
