Blueberry Maple Syrup

Ingredients
- 120ml water
- 160ml maple syrup
- 1 lemon (60g), zested and juiced
- 600g fresh blueberries
Directions
- Place water, maple syrup, lemon zest and juice, and blueberries into a saucepan over high heat.
- Bring to the boil and cook for 2–3 minutes, stirring constantly, until the berries begin to burst.
- Remove from heat and allow to cool slightly.
- Carefully pour the mixture into the Vitamix container and secure the lid.
- Run the Smoothie Program, or start on the lowest speed and quickly increase to the highest speed.
- Blend for 40–50 seconds, or until completely smooth.
- Serve warm or allow to cool before storing.
Recipe Notes
- Frozen blueberries can be used, though cooking time may increase slightly.
- Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 6 months.
- Perfect served with waffles, pancakes or desserts.
