Blueberry Maple Syrup

Ingredients

  • 120ml water
  • 160ml maple syrup
  • 1 lemon (60g), zested and juiced
  • 600g fresh blueberries

Directions

  1. Place water, maple syrup, lemon zest and juice, and blueberries into a saucepan over high heat.
  2. Bring to the boil and cook for 2–3 minutes, stirring constantly, until the berries begin to burst.
  3. Remove from heat and allow to cool slightly.
  4. Carefully pour the mixture into the Vitamix container and secure the lid.
  5. Run the Smoothie Program, or start on the lowest speed and quickly increase to the highest speed.
  6. Blend for 40–50 seconds, or until completely smooth.
  7. Serve warm or allow to cool before storing.

Recipe Notes

  • Frozen blueberries can be used, though cooking time may increase slightly.
  • Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 6 months.
  • Perfect served with waffles, pancakes or desserts.
