Ingredients – 2-litre container
  • 120ml red wine vinegar
  • 1 lemon, peeled
  • 100g red onion, peeled
  • 60g fresh parsley leaves
  • 60g fresh coriander leaves
  • 10g fresh oregano
  • 12 garlic cloves, peeled
  • 10g jalapeño, seeded
  • ½ tsp sea salt (optional)
  • ¼ tsp ground black pepper
  • 360ml extra virgin olive oil
Ingredients – 1.4-litre container
  • 60ml red wine vinegar
  • ½ lemon, peeled
  • 50g red onion, peeled
  • 30g fresh parsley leaves
  • 30g fresh coriander leaves
  • 5g fresh oregano
  • 6 garlic cloves, peeled
  • 10g jalapeño, seeded
  • ¼ tsp sea salt (optional)
  • ⅛ tsp ground black pepper
  • 180ml extra virgin olive oil

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
  3. For a textured chimichurri, select Variable 6 and pulse 10–15 times while using the tamper.

Recipe Notes

  • Use as a marinade or sauce for grilled meat, chicken, fish, vegetables, or grains.
  • Substitute part of the olive oil with water for a lighter version.
