Dan Dan Noodle Salad

Ingredients
For the dressing
- 1 tbsp chilli crisp
- 30ml soy sauce
- 30ml rice wine vinegar
- 1 garlic clove
- 60ml tahini
- 80ml soy milk
For the salad
- 1 head bok choy (approx. 2kg), chopped
- 4 packets ramen noodles
- 360g corn kernels
- 40g toasted sesame seeds
Directions
- Place all dressing ingredients into the Vitamix container in the order listed and secure the lid.
- Start on the lowest speed, then quickly increase to the highest speed. Blend for 40–45 seconds until smooth.
- Bring a large pot of water to the boil.
- Add ramen noodles and cook for about 7 minutes, until almost done.
- Add corn and bok choy and cook for 1 minute.
- Drain and rinse under cold water, then transfer to a large bowl.
- Add the dressing and toss until evenly coated.
- Sprinkle with toasted sesame seeds and serve.
Recipe Notes
- Add shredded chicken, tofu or edamame for extra protein.
- Adjust chilli crisp to control heat level.
- Add a small amount of honey if a sweeter balance is preferred.
- Can be made ahead and served chilled or at room temperature.
