Dan Dan Noodle Salad

Ingredients

For the dressing

  • 1 tbsp chilli crisp
  • 30ml soy sauce
  • 30ml rice wine vinegar
  • 1 garlic clove
  • 60ml tahini
  • 80ml soy milk

For the salad

  • 1 head bok choy (approx. 2kg), chopped
  • 4 packets ramen noodles
  • 360g corn kernels
  • 40g toasted sesame seeds

Directions

  1. Place all dressing ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start on the lowest speed, then quickly increase to the highest speed. Blend for 40–45 seconds until smooth.
  3. Bring a large pot of water to the boil.
  4. Add ramen noodles and cook for about 7 minutes, until almost done.
  5. Add corn and bok choy and cook for 1 minute.
  6. Drain and rinse under cold water, then transfer to a large bowl.
  7. Add the dressing and toss until evenly coated.
  8. Sprinkle with toasted sesame seeds and serve.

Recipe Notes

  • Add shredded chicken, tofu or edamame for extra protein.
  • Adjust chilli crisp to control heat level.
  • Add a small amount of honey if a sweeter balance is preferred.
  • Can be made ahead and served chilled or at room temperature.
