Edamame Guacamole

This guacamole gets a tasty twist when edamame is added for a great nutritional boost.

Ingredients
- ¾ cup water
- 1 lime, peeled
- ½ bunch (25g) coriander leaves, stems removed
- 1 garlic clove, peeled
- ½ jalapeno, stemmed with seeds
- 2 (250g) avocados, peeled, pitted
- 3 cups (460g) frozen edamame beans, shelled, thawed
- 1 tsp sea salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 45 seconds to a minute.
Chef's Note:
If the mixture is too thick add a little water until the desired consistency is reached. If you would like to have a less spicy dip remove the seeds from the jalapeno. Use as a spread on sandwiches or a dip for pita chips and fresh cut or roasted vegetables. The addition of edamame pumps up the protein in this delicious twist on guacamole.
