Ingredients

275g cooked fava beans, peeled 550g cooked fava beans, peeled
60ml tahini 120ml tahini
45ml extra virgin olive oil 90ml extra virgin olive oil
45ml fresh lemon juice 90ml fresh lemon juice
2 garlic cloves 4 garlic cloves
10g fresh dill (or basil or tarragon) 16g fresh dill (or basil or tarragon)
¼ serrano chilli, seeded (optional) ½ serrano chilli, seeded (optional)
½ tsp sea salt (optional) 1 tsp sea salt (optional)

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed.
  3. Blend for 60 seconds, using the tamper to push ingredients toward the blades, until smooth and creamy.
  4. Taste and adjust seasoning with additional lemon juice or salt if needed.
  5. Serve in a bowl with a drizzle of extra virgin olive oil and a sprinkle of fresh dill.

Recipe Notes

  • Fresh dill can be substituted with basil, mint, parsley, chives or tarragon.
  • Frozen fava beans work well, just ensure they are peeled before use.
  • Store in an airtight container in the refrigerator for up to 5 days.
