Homemade Almond Butter

| 450g roasted, unsalted almonds | 600g roasted, unsalted almonds |
Directions
- Place the roasted almonds into the Vitamix container and secure the lid.
- 1.4-litre Container: Run the Nut Butter Program, or start on the lowest speed and quickly increase to the highest speed.
- 2-litre Container: Run the Dips & Spreads Program, or start on the lowest speed and quickly increase to the highest speed.
- Blend for 60 seconds, using the tamper to push the almonds toward the blades.
- For a completely smooth almond butter, continue blending for an additional 1 minute.
- Transfer to a clean airtight jar and allow to cool before sealing.
Recipe Notes
- If using raw almonds, add 60ml neutral oil to achieve a smooth consistency.
- If roasting your own almonds, bake at 175°C for 10–15 minutes, then cool completely before blending.
- Store in an airtight container in the pantry for up to 1 month or refrigerate for longer freshness. Stir before using if natural oils separate.
- Delicious as a spread, fruit dip, smoothie ingredient or baking addition.
