Ingredients
- 300g tomatoes, halved
- 25g garlic cloves, peeled
- 8g fresh parsley, packed
- 180g yellow onion, peeled and halved
- 15ml vegetable oil (optional)
- ½ tbsp smoked paprika
- ½ tsp ground black pepper
- ½ cup peanut butter
- 600ml vegetable broth, plus more as needed
- 150g russet potato, cut into 2cm pieces
- 150g sweet potato, cut into 2cm pieces
- 150g carrots, cut into 2cm pieces
- 15g scotch bonnet pepper (or habanero), optional
- 1 tsp sea salt (optional)
Directions
- Add the tomatoes, garlic, parsley and half the onion to the Vitamix container. Secure the lid.
- Start on the lowest speed, then quickly increase to Variable 7. Blend for 10–20 seconds using the tamper. The mixture should be uniform but not fully smooth.
- Roughly chop the remaining onion.
- Heat a large saucepan over medium heat. Add the oil (if using) and sauté the chopped onion for 2–3 minutes until tender.
- Pour in the blended mixture. Add the smoked paprika and black pepper. Cook for about 8 minutes, stirring frequently.
- Add the peanut butter, vegetable broth, potatoes, sweet potato, carrots, whole chilli (if using) and salt. Stir well.
- Simmer for 10–15 minutes until vegetables are cooked through.
- Remove the whole chilli pepper, if used.
- If the stew is too thick, add a splash of broth or water. If too thin, simmer a little longer.
- Serve over steamed rice or couscous. Garnish with ground peanuts and parsley.
Recipe Notes
- Add the chilli to the blender step if you prefer a spicier stew.
- This dish can also be made with beef or chicken - brown it first, then add at the end.
