Oat Chocolate Chip Muffins

Ingredients

  • 160g rolled oats
  • 2 tsp baking powder
  • 1 medium banana (110g)
  • 60ml melted coconut oil
  • 1 egg (or flax egg: 1 tbsp flax meal + 2 tbsp water)
  • 60ml oat milk
  • 60g dark chocolate chips

Directions

  1. Preheat oven to 175°C. Line a muffin tray with 6–8 baking cups.
  2. Place rolled oats and baking powder into the Vitamix container and secure the lid.
  3. Start on the lowest speed, then quickly increase to Variable 9. Blend for 15 seconds until a fine oat flour forms. Transfer to a bowl.
  4. Place banana, melted coconut oil, egg and oat milk into the Vitamix container and secure the lid.
  5. Start on the lowest speed, then quickly increase to the highest speed. Blend for 30 seconds.
  6. Add the oat flour mixture back into the container.
  7. Start on the lowest speed, then increase to Variable 5. Blend for 10–15 seconds until just combined.
  8. Remove the lid plug, add chocolate chips and pulse 6–8 times on Variable 1 to combine.
  9. Spoon mixture into prepared muffin cups.
  10. Bake for 20–25 minutes, or until a toothpick inserted comes out clean.
  11. Allow to cool slightly before serving.

Recipe Notes

  • Use dairy-free chocolate chips to keep the recipe fully plant-based.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
