Oat Chocolate Chip Muffins

Ingredients
- 160g rolled oats
- 2 tsp baking powder
- 1 medium banana (110g)
- 60ml melted coconut oil
- 1 egg (or flax egg: 1 tbsp flax meal + 2 tbsp water)
- 60ml oat milk
- 60g dark chocolate chips
Directions
- Preheat oven to 175°C. Line a muffin tray with 6–8 baking cups.
- Place rolled oats and baking powder into the Vitamix container and secure the lid.
- Start on the lowest speed, then quickly increase to Variable 9. Blend for 15 seconds until a fine oat flour forms. Transfer to a bowl.
- Place banana, melted coconut oil, egg and oat milk into the Vitamix container and secure the lid.
- Start on the lowest speed, then quickly increase to the highest speed. Blend for 30 seconds.
- Add the oat flour mixture back into the container.
- Start on the lowest speed, then increase to Variable 5. Blend for 10–15 seconds until just combined.
- Remove the lid plug, add chocolate chips and pulse 6–8 times on Variable 1 to combine.
- Spoon mixture into prepared muffin cups.
- Bake for 20–25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool slightly before serving.
Recipe Notes
- Use dairy-free chocolate chips to keep the recipe fully plant-based.
- Store in an airtight container for up to 3 days or freeze for longer storage.
