Radish Kimchi

Ingredients
- 120ml water
- 3 tbsp sea salt
- 3 tbsp plum sauce
- 2kg radishes, ends trimmed and quartered
- 175g fresh chives, cut into 6cm segments
- 60ml fish sauce
- 1 medium white onion (155g), peeled and halved
- 3 red chillies
- 6 medium garlic cloves, peeled
- 1 piece fresh ginger, peeled
- 2 tbsp salted shrimp sauce
- 2 tbsp cooked white rice, cooled
- 4 tbsp red pepper powder
Directions
- Combine the water, sea salt and plum sauce in a small bowl and stir to incorporate. Set aside.
- Place the radish and chives into a large bowl. Pour the water mixture over and toss well to coat. Set aside.
- Place fish sauce, onion, red chillies, garlic, ginger, shrimp sauce and cooled rice into the Vitamix container in the order listed and secure the lid.
- Select Variable 1. Start the machine and slowly increase to the highest speed. Blend for 45 seconds until a fine paste forms.
- Remove the lid and stir the red pepper powder into the paste until fully incorporated.
- Pour the paste over the radish and chive mixture. Toss until evenly coated.
- Cover and refrigerate overnight before serving.
Recipe Notes
- For a vegetarian version, replace fish sauce and shrimp sauce with a vegan fish sauce alternative or soy sauce.
- Flavour develops overnight and continues improving over the next few days.
