Radish Kimchi

Ingredients

  • 120ml water
  • 3 tbsp sea salt
  • 3 tbsp plum sauce
  • 2kg radishes, ends trimmed and quartered
  • 175g fresh chives, cut into 6cm segments
  • 60ml fish sauce
  • 1 medium white onion (155g), peeled and halved
  • 3 red chillies
  • 6 medium garlic cloves, peeled
  • 1 piece fresh ginger, peeled
  • 2 tbsp salted shrimp sauce
  • 2 tbsp cooked white rice, cooled
  • 4 tbsp red pepper powder

Directions

  1. Combine the water, sea salt and plum sauce in a small bowl and stir to incorporate. Set aside.
  2. Place the radish and chives into a large bowl. Pour the water mixture over and toss well to coat. Set aside.
  3. Place fish sauce, onion, red chillies, garlic, ginger, shrimp sauce and cooled rice into the Vitamix container in the order listed and secure the lid.
  4. Select Variable 1. Start the machine and slowly increase to the highest speed. Blend for 45 seconds until a fine paste forms.
  5. Remove the lid and stir the red pepper powder into the paste until fully incorporated.
  6. Pour the paste over the radish and chive mixture. Toss until evenly coated.
  7. Cover and refrigerate overnight before serving.

Recipe Notes

  • For a vegetarian version, replace fish sauce and shrimp sauce with a vegan fish sauce alternative or soy sauce.
  • Flavour develops overnight and continues improving over the next few days.
