Speedy, Silky Red Sauce (with protein!)

Ingredients
- 1 x 400g tinned whole tomatoes
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 200g cottage cheese
- 1 cup white beans (cannellini), drained
- 2 tablespoons tomato paste
- 5 sun-dried tomatoes
- 1 small garlic clove
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup water or broth
- To serve: Cooked rigatoni, Olive oil, torn basil leaves, Parmigiano Reggiano
Directions
- Add the ingredients into the Vitamix, in the order listed, except for the water/broth.
- Secure the lid and start blending on Variable 1, gradually increasing to Variable 10 over 10–15 seconds.
- Blend on high for 5–6 minutes until the sauce is completely smooth, hot and lightly steaming.
- If the sauce is thicker than desired, add a splash of water or stock and blend briefly to loosen. Serve immediately folding it through cooked rigatoni and top with a drizzle of olive oil, torn basil leaves and Parmigiano Reggiano.
