Speedy, Silky Red Sauce (with protein!)

Ingredients

  • 1 x 400g tinned whole tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 200g cottage cheese
  • 1 cup white beans (cannellini), drained
  • 2 tablespoons tomato paste
  • 5 sun-dried tomatoes
  • 1 small garlic clove
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup water or broth
  • To serve: Cooked rigatoni, Olive oil, torn basil leaves, Parmigiano Reggiano

Directions

  1. Add the ingredients into the Vitamix, in the order listed, except for the water/broth.
  2. Secure the lid and start blending on Variable 1, gradually increasing to Variable 10 over 10–15 seconds.
  3. Blend on high for 5–6 minutes until the sauce is completely smooth, hot and lightly steaming.
  4. If the sauce is thicker than desired, add a splash of water or stock and blend briefly to loosen. Serve immediately folding it through cooked rigatoni and top with a drizzle of olive oil, torn basil leaves and Parmigiano Reggiano.
