Strawberry Coconut Smoothie

Ingredients

  • 2 cups (500ml) water
  • 1 cup (75g) shredded coconut
  • Alternate: 300ml fresh coconut milk
  • ½ cup fresh strawberries
  • Splash of vanilla
  • 2 fresh dates (pitted) or 1 tbsp maple syrup/honey
  • 1 cup ice

Directions

  1. Blend shredded coconut and water on high for 60 seconds (yes, homemade coconut milk that fast).
  2. Strain. 
  3. Add coconut milk back into the blender with the rest of the ingredients in the order listed.
  4. Blend for 45 seconds on Smoothie function, or start on Variable 1 and increase to 10.
  5. Pour and serve.
